Coconut Bread
Published September 14th, 2006 in GeneralI was inspired by this recent post on The Wednesday Chef yesterday and made Bill Granger’s Coconut Bread.
Yummy!
I think next time (and there will be a next time) I will try toasting the coconut first to add a little more deep coconut flavor and a little more texture. I used sweetened flaked coconut, but I’ll also have to try the unsweetened kind. I thought I had some but it must not have survived the move.
Overall, this was very tasty, though, and definitely something that I’ll be adding to my often-made list.
