Lentils on a Clammy Day
Published July 22nd, 2006 in MealsSometimes, even during a hot summer, you get a cold, clammy, rainy day.
This is good because you can eat leftover lentils, mixed with some Israeli couscous, and not feel hot and gross. The lentils were cooked with onions, garlic, tomato paste, chicken broth, a little olive oil, and a variety of spices which I can’t remember at the moment, but I think included oregano and cayenne pepper.
A bowl of this, with an extra little splash of olive oil, and some “nubby carrots” made up my lunch today and it just seemed perfect for a dank day.
