Leftover Brussels Sprouts for lunch

I’m visiting at my mom’s house for a few days. All the more appropriate for a post about my picky eating behavior.

I have vivid memories about being served brussels sprouts and choking miniscule amounts of them down, although it barely ever got to that point. Usually I would refuse them outright, their sweatsock-like odor overwhelming me.

I would have LAUGHED and LAUGHED if someone had said, “you know, when you’re 27 and looking in the refrigerator at your mom’s, you will be very happy to see leftover brussels sprouts.”

Yes. They are now probably one of my favorite veggies. The ones pictured above were rescued from a little container in the fridge. I’m assuming that they were originally sauteed with some olive oil and garlic. I arranged them on the baking sheet for the toaster oven, sprinkled them with a pinch of bread crumbs, a little grated pecorino romano cheese, and a tiny tiny bit of bacon. Along with the sprouts, I had some fried egg whites (not a fan of the yolk [still kind of picky], although I’ve warmed a bit to scrambled eggs. Mia got the yolks this time.)

Who would have imagined that I would be satisfied with LEFTOVER BRUSSELS SPROUTS for lunch? Well I was and I’ll eat them again! Take that, 7-year old me!
