Arroz Con Pollo de IrmaEggplant Parmigiana

The other night I made the recipe for Arroz con Pollo featured on Cookin’ in the ‘Cuse a few months ago. Very tasty and definitely added to my list of staple meals. Last night, I made Eggplant Parmigiana following a recipe from Cook’s Illustrated (fyi - CI is a pay site so this recipe is accessible to members only - I didn’t alter it at all, so I don’t feel comfortable posting it without permission). Another addition to my list of favorites. Clearly though, I need to not take photos underneath the hood light of the stove as it lends an overwhelming yellow cast to all images that is hard to clean up in Photoshop.

Pork Shoulder in Brine

Tonight it will be roasted pork shoulder, which has been brining in a salt water mixture with lemons, sage, and rosemary. I chose those herbs as I had them leftover from making Orangette’s adaptation of “Dreamy White Beans”. Pork ‘n beans tonight! And many leftovers for the next few days…
